No Fail Mexican Street Corn
Ingredients:
2 corn on cob
2 tablespoons mayonnaise
2 cloves of garlic, chopped
1 tablespoon butter, melted
cayenne pepper
paprika
parsley, fresh or dried
Directions:
1. Preheat oven to 400 degrees Fahrenheit
2. Brush or spoon melted butter over each corn on cob and sprinkle salt
3. Bake corn for 40 mins on foil covered baking sheet
4. Add chopped garlic to mayonnaise and mix. Add salt, pepper and parsley and set aside in refrigerator until ready to use.
5. When corn is ready, remove from oven and allow cooling for about 10 minutes.
6. Coat corn with the mayo mixture.
7. Season with salt, pepper, cayenne and paprika. Enjoy!
